[Recipe] Southern Classics with a Twist

Biscuits and Gravy are another of those things that gets made a lot in my house. It’s a Southern Classic, in all honesty. But like with anything else, sometimes even the classics get a little boring over time. And what do you do in the Kitchen when you get bored? If you’re like me then the only solution is to experiment! One such experiment is how I wound up with Sausage Biscuits and Gravy- and it was delicious.

Southern Drop Biscuits and Brown Gravy

  • 2 cups Flour
  • 2 tbsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Sugar
  • 5 tbsp Cold Butter + 3 more
  • 1 cup Whole Milk
  • Original flavor ground Sausage
  • 1 small onion
  • 5 cloves garlic (roughly half a medium bulb)
  • Brown Gravy Packet + water

Directions: To begin, start by Preheating your oven to 320 degrees Fahrenheit.

In a small skillet, heat 3 tbsp butter to melt. Roughly dice half a small onion and 5 or so bulbs of garlic, and saute them together on medium to low heat.

While those are cooking, make your Biscuit batter. Start by combining the Flour, baking powder, sugar, and salt together. Cut it with the remaining 5 tbsp of butter to achieve a crumbly consistency. Finally, mix in the milk. Set the batter aside and return to the pan.

When the mixture is cooked until onions are soft, remove the mixture to a bowl. Add 1/2 a pound of your Sausage to the bowl, and mix it well with the onion and Garlic. Using this mixture, create meatballs- the number of meatballs being equal to the number of biscuits you are making (this recipe usually makes 6). Brown on all sides in the pan, then cover to steam until cooked through. Make sure to turn them occasionally while steaming.

Line a baking sheet with a thin layer of butter or oil (or use wax paper). Place approximately 1 tbsp of the biscuit batter for every biscuit you plan on making (6 biscuits  6 tbsps batter), spacing the dollops an equal width apart from one another.

When sausage balls are finished, remove from heat and use the spoon to place 1 sausage ball on each of the dollops you just made on the pan. Cover each one with the remaining biscuit batter making sure to cover all sides of the sausage balls so that they are in the center of the biscuits when cooked. Place rack in the oven and cook until golden brown and cooked through.

While biscuits are baking, prepare the brown gravy as per the package directions. Remove biscuits from oven when finished, plate, and top with gravy.
