My Husband and I planned another date for ourselves over the weekend. The goal was to go out to the lake at night for a Strawberry Themed summer picnic, some night swimming, and stargazing. It did not quite go as planned, but it was still nice!
The preliminary menu for the night looked something like this: Strawberry Lemonade to drink; Basalmic Strawberry and Cheese Pizza with Mint and Basil on a Sweet crust for dinner [reference] [reference]; Goat Cheese as well as “Scarlet” Cheese (Sweetened White Stinton with Cranberries), served topped with Strawberries over Sea Salt and Peppercorn crackers as a pre and post swim snack; and Cheesecake with reduced Strawberry Topping for dessert [reference].
The menu took all day to prepare between making the crust and cheesecake to hand squeezing an entire bag of lemons myself for the Lemonade. When it came to transporting it all, though, the muffin tray we received from my Husband’s coworker as a wedding gift was perfect!
When it was all finished we donned out swimming gear, grabbed a comforter, and headed out. We arrived at Ponca Lake just in time to see the sunset. Unfortunately swimming closed not long afterwards, so we did not have the opportunity to swim as planned. Still, we stuck around for another two whole hours looking at the stars and snacking away on the food I had prepared. It was really a marvelous evening!
The downside, however, is that I did not think to get pictures of the food or the lake this time around. As such, I only have two photos of the Lemonade I made for the trip.
Strawberry Lemonade with Mint and Basil
- 1/3 gallon of warm water
- 2 cups of granulated sugar
- 1 bag of Lemons
- 1 container of fresh strawberries
- 1 hand-full each of fresh Mint and Basil
Begin by cleaning your pitcher, halving your lemons, and squeezing the lemon juice and pulp into the pitcher; alternatively you could use a juicer for this if you would like to, but I did not personally have one. Instead I juiced the lemons by poking them with a fork, then manually squeezing the juice out of them via hand.
Once finished, pure the Strawberries, Mint, and Basil together in a blender until liquid. Add this into your lemon mixture. In small increments, add warm water together with sugar, then add it to your fruit and herb mixture- stirring thoroughly to incorporate and tasting between each addition until you reach a flavor that is to your satisfaction.
Chill for a few hours, and your Lemonade is complete!
