Breads are really one of my favorites; tere is nothing better, from the first steps of the process to the last. And oh, the smell of it while it’s cooking!
- Chopped Walnuts for Garnish (Optional)
- 1 Tsp Cinnamon
- 1 Cup Fresh Strawberries
- 1/4 Cup White Chocolate Chips
- 1 1/2 Tbsp Fresh Chopped Basil (Preferably a Purple variety)
- 1 1/2 Cups Whole Wheat Flour
- 1 Cup White Sugar
- 2 Large Eggs
- 1 Cup Strawberry Yoghurt (Preferably a Greek variety like Chobani)
- 1 Tsp Coarse Sea Salt
- 1 Tsp Baking Soda
Preheat oven to 350 Degrees fahrenheit.
De-leaf the Strawberries, halve, and place in bottom of a bowl. With a potato hand-masher, mash until strawberries are mostly pulp, but there are still chunks. Cream in Eggs, Sugar, and Yoghurt.
In another bowl, combine Flour, Salt, Baking Soda, Cinnamon, and Basil. Mix well then slowly incorporate the Strawberry mixture into the dry ingredients- folding to mix. Fold in White Chocolate Chips.
Oil a loaf pan and move batter to pan. Place in oven and cook about 45 minutes or until done. When baking is complete, remove the loaf from the oven and allow to cool.
Optional: Top with chopped strawberries, chopped Walnuts, and a light glaze.
